Microbial Challenge Studies
We design microbial challenge studies to evaluate growth, survival, or reduction in a food or beverage. The study is built around your formulation, process, packaging, and storage conditions.

How we can help
Study the organisms relevant to your product
A challenge study introduces selected microorganisms under controlled laboratory conditions. It can help answer whether a formulation limits growth, how a process affects survival, or how a preservative change affects stability. We agree on the question and study design before work begins.
- Growth potential under intended storage and relevant foreseeable conditions
- Microbial reduction or survival in a formulation or process
- Preservative and formulation comparisons
- Spoilage challenges tailored to the product
- Scientific support for process authority reviews and shelf life decisions
Before we start
Useful information to have ready
Start with what you have. We will let you know what else is needed.
- Formulation, process flow, and relevant existing data
- Packaging and intended distribution and storage
- Target shelf life and any proposed safety or stability claim
- The customer, regulator, or process authority requirement to be addressed
We can arrange how to share detailed formulas and confidential records after the first conversation.
Common questions
Is there one standard challenge study for every food?
No. The organisms, design, measurements, and criteria depend on the product and question. A growth study, a reduction study, and a spoilage challenge are not interchangeable.
Can the results cover multiple flavors or formulas?
Sometimes. We review the differences between formulas and select representative products only when there is a scientific basis for grouping them.
